Mole rat meat is a consumable item in Fallout: New Vegas.

Characteristics

The filleted meat of a mole rat, which restores Hit Points by a small amount, doles out 3 rads upon consumption, and lowers Strength by 1 point, for a total of two minutes.

Mole rat meat can be used to craft mole rat stew.
